The NFPA requires that in commercial kitchen the exhaust hoods have a combination with kitchen hood suppression system so that fumes from a grease laden vapour fire are properly vented and the fire is put out quickly.
The Fire Code under NFPA 96 requires semi-annually kitchen hood inspections to ensure that operations of the equipment is maintained and will work appropriately in a time of an emergency.
Ontario Fire Protection has certified technicians to conduct installation, maintenance and inspection of kitchen hood suppression systems.
